Should I start a new game when it’s updated?
Or can I continue to play from the game I was playing?

You can start over with the new update if you want. That way you can see the new features fresh.
For the most part, the devs try to make it so games can continue through new updates. Some issues might come up like when new building are added, if you had a building there, you will lose it (but you’ll be refunded for any items that were in the building).
And at some point, it’s possible that they make major changes that make old saves unplayable, but overall, they try to make it so you can continue!
