A feature I would use in all my stores and I think others would to is have an access type zone.
For example the shop floor would be accessible to everyone but if you have a bar or fast food that’s built on the shop floor you could draw a box and change the access type to staff only, this would stop customers going behind the counter.
Also you could stop access to customers going back of house into the store room.
